Fresh tomatoes make this salsa the perfect side-dish or snack!

Ingredients

  • 11 whole Tomatoes, Cored
  • 1 whole Onion, Peeled
  • 1 whole Bell Pepper, Stem And Seeds Removed (or More To Taste; Up To Triple)
  • 4 Tablespoons Chopped Cilantro Or Parsley
  • 1 whole Lime, Juiced
  • Salt And Pepper, to taste

Preparation

Chop the tomatoes, onion and bell pepper. Mix in a large bowl and add the cilantro. Mix in the lime juice, salt and pepper. Refrigerate for at least one hour before serving. Before serving the salsa I like to let it sit at room temperature for about half an hour. I don’t like cold salsa. This is just my preference, though.
