Description

This delicious dish replaces sour cream with Greek yogurt and adds chunks of avocado instead of using guacamole. Sure to please your guests for Superbowl parties!

Ingredients

  • 1 can Refried Beans (16 Oz Can)
  • 2 teaspoons Fresh Lime Juice
  • 1 Tablespoon Water
  • Coarse Salt And Pepper
  • ¼ cups Taco Seasoning
  • ½ cups Plain Greek Yogurt
  • ½ cups Extra-sharp Cheddar Cheese, Grated
  • 2 cans Chopped Green Chiles (4 Oz Cans)
  • 2  Plum Tomatoes, Chopped
  • 1  Avocado, Halved, Pitted, Peeled And Diced
  • 1 cup Shredded Romaine Lettuce
  • 2  Scallions, Chopped
  • Tortilla Chips For Serving

Preparation

In a medium bowl, combine beans, lime juice, and water then season with salt and pepper. Spread beans onto the bottom of an 8×8 serving dish. In a small bowl mix taco seasoning with Greek yogurt. Spread over beans. Top with cheese, chilies, tomatoes, avocado, lettuce, and scallions. Serve with tortilla chips.
