Homemade Pimento Cheese Cups

Description

Fun little homemade bread cups made with sandwich bread and filled with homemade pimento cheese.

Ingredients

  • FOR THE CHEESE:
  • 1 cup Asiago Fresco Cheese, Grated
  • ½ cups White Cheddar Cheese, Grated
  • ½ cups Pepper Jack Cheese, Grated
  • 4 ounces, weight Cream Cheese, Softened
  • 3 ounces, weight Pimentos (drained)
  • ½ teaspoons Onion Powder
  • ¼ teaspoons Garlic Powder
  • ¾ teaspoons Cayenne Pepper
  • ¼ cups Olive Oil Mayo, Or More To Taste
  • FOR THE BREAD CUPS:
  • 1 loaf Sliced Sandwich Bread
  • 1 stick Melted Butter
  • 6 leaves Fresh Basil, Julienned
  • Cayenne Pepper (Optional)

Preparation

For the cheese:
Combine all ingredients in a bowl and, with a stand or handheld mixer, blend until completely incorporated.

For the bread cups:
Roll sliced sandwich bread flat and, using a 2-3 inch cookie cutter, biscuit cutter or a juice glass turned upside down, cut out rounds of bread.

Brush both sides with melted butter and place in mini muffin tin. Bake at 350ºF for approximately 10 minutes or until golden brown.

Remove from oven, let cool slightly and fill with homemade pimento cheese. Sprinkle with julienned fresh basil and cayenne pepper if desired.

Can be served warm or room temperature.
