Description
A traditional Mexican side dish made with homemade tortilla chips and topped with cheese, black beans, tomatoes and onions.
Ingredients
- 2 whole Mission Tortilla Ultra Thin Corn Tortillas (40 Calories Each)
- 2 Tablespoons Black Beans
- 2 Tablespoons Tomatoes, Seeded, Diced
- 2 Tablespoons Onion, Diced
- 1 Tablespoon Queso Cheese (I Used Trader Joe’s), Warmed
- 1 Tablespoon Pickled Jalapeños
- 2 Tablespoons Avocado, diced
- 1 Tablespoon Greek Yogurt, Plain
- Salt To Taste
Preparation
Preheat your broiler on high. Line a baking sheet with parchment paper. Cut your tortilla shells into 6 slices per shell. Place shells on baking sheet and lightly spray with cooking spray. Flip shells and lightly spray the other side with cooking spray and sprinkle with salt. Place under the broiler on the bottom shelf and cook for 2 minutes. Flip the chips, and cook for 2 more minutes or until crispy. Watch so they don’t burn. When done remove the pan from the oven.
Place cooked tortilla shells onto your plate and layer with black beans, tomato and onions. I make sure to put ingredients underneath the chips too. Then add cheese, jalapenos. avocado and add a dollop of Greek yogurt.
