5-ingredient cheesecake that you can prepare fast without turning the oven on!

Ingredients

  • 7 whole Apricots
  • 100 grams Digestive Biscuits
  • 100 grams Butter
  • 600 grams Cream Cheese (Philadelphia)
  • 1 Tablespoon Honey, Agave Or Your Sweetener Of Choice

Preparation

Before preparing the ingredients, prepare a medium size round cake tin. Cover it with tinfoil.

Peel and slice apricots. Put in a small saucepan with 5 spoonfuls of water. Bring to a boil. Cook for about 15 minutes, stirring occasionally.

Meanwhile, put biscuits in a bowl and crush into crumbs. If butter isn’t softened, heat in the microwave (400W) for about 20 seconds.

Mix soft butter with biscuit crumbs until well-combined. Spread mixture into the cake tin until evenly flat. Press crust down as much as you can.

Beat cream cheese and honey until soft. (You can add a dash of vanilla if desired.) Spoon cream in the middle of the crust and spread outwards to the edges. Decorate with cooked apricots.

Let set in the fridge overnight.
