Open-Faced Sardine and Onion Sandwich

Description

The combination of mustard, warmed sardines, red onion, and thinly sliced red onions with have your taste buds zinging. And yes, I said sardines. You know they’re good for you, right?

Ingredients

  • 3 whole Sardines, Boneless And Skinless
  • 1 slice Texas Toast, Toasted, Or Standard Sandwich Slice
  • 2 Tablespoons Dijon Mustard
  • ¼ cups Thinly Sliced Red Onion
  • ¼ whole Lemon, Lightly Squeezed

Preparation

Preheat oven to 350ºF. Place sardines on an oven safe plate and put in the oven while it preheats, to warm through.

Place bread in the toaster. Remove from the toaster and slather on Dijon mustard from edge to edge. Place half the sliced onions on the mustard. Remove sardines from the oven and arrange them on the toast. Place remaining onion on the sardines, and squeeze a bit of lemon over the top.

The sardines themselves lend a similar flavor and texture to what you might expect from tuna, but possibly better in this case. The slight bite of onion along with the tangy lemon and mustard makes every bite memorable, especially with the crunch of the toast.
