Overnight Yogurt Parfait

Description

Because all the ingredients mingle overnight in the refrigerator, the excess moisture from the fruit and yogurt is absorbed into the granola, in turn thickening the yogurt and making the granola plump and delicious. So if you are turned off by runny yogurt (like me), this is a good way to transform it.

Ingredients

  • ½ cups Granola
  • ½ cups Yogurt, Use Your Favorite Type
  • ½ cups Sliced Fruit Or Berries

Preparation

In a small bowl add half of the granola, top with half of the yogurt, then half of the fruit. Repeat these layers using the remainder of the granola, yogurt and fruit.

Cover with plastic wrap and refrigerate overnight (or at least 8 hours).
The next morning, stir the layers together and eat.

* Note regarding the yogurt: Once these are assembled and have set up in the fridge overnight, the yogurt does thicken. Greek yogurt will yield in a super thick texture; regular yogurt will yield a a texture similar to that of Greek yogurt.
