Description
A wonderful little snack that tastes kind of like Cracker Jacks. It’s made with oats, homemade peanut butter and puffed cereal. It’s a perfect bowl of cereal, or a topping on yogurt or ice cream, or simply eaten by the handful.
Ingredients
- FOR THE WET INGREDIENTS:
- 3 Tablespoons Brown Rice Syrup
- 1 Tablespoon Honey
- 1 Tablespoon Coconut Oil
- 2 Tablespoons Applesauce (unsweetened)
- ¾ cups Peanut Butter
- ¼ cups Brown Sugar
- FOR THE DRY INGREDIENTS:
- 5 cups Rolled Oats Or Old Fashion Oatmeal
- 2 cups Puffed Cereal – I Used Arrowmills Puffed Kamut
- ¾ cups Honey Roasted Peanuts, Chopped
- 1 Tablespoon Chia Seeds
- 1 Tablespoon Ground Flax
- ¼ teaspoons Cinnamon
Preparation
Preheat oven to 300ºF.
In a medium saucepan over medium heat, add the wet ingredients. Stir well. Bring to a boil and then simmer on low for 5-10 minutes, stirring frequently.
In a very large mixing bowl, mix together the dry ingredients.
Add the wet mixture, while it’s still warm, on top of the dry mixture and stir well. It will be very thick and hard to stir, but keep at it until everything is thoroughly combined.
Spread onto a baking sheet lined with parchment paper or a nonstick mat and bake in the oven for 30 minutes. Remove the pan from the oven and give the granola a good stir to ensure even baking. Place back in the oven and bake for more 15 minutes.
Allow to cool for 20-25 minutes on the pan before serving (I just turn off the oven and open the oven door and let it sit in there till I’m ready to put it away). The granola will stiffen up as it cools.
