Ingredients

  • FOR THE SALMON DIP:
  • ¼ pounds Smoked Salmon
  • ⅓ cups Red Onion, Finely Chopped
  • ⅓ cups Celery Finely Chopped
  • 1 Tablespoon Parsley, Chopped (plus Extra For Garnishing!)
  • 2 teaspoons Lemon Juice
  • 3 Tablespoons Mayonnaise
  • 3 Tablespoons Sour Cream
  • ⅛ teaspoons Hot Sauce (add More If You Like More Of A Kick!)
  • FOR THE CUCUMBER CUPS:
  • 3 whole Cucumbers
  • 1 pinch Salt And Pepper, to taste

Preparation

For the salmon dip:
1. Gently separate smoked salmon into small chunks with your hands. Place in medium-sized bowl.
2. Add remaining ingredients to salmon and stir gently until just combined.
3. Spoon mixture into cucumber cups and top with a fresh sprig of parsley. Serve cold.

For the cucumber cups:
1. Peel cucumbers and slice into 1-2 inch-thick circles.
2. Use a melon baller or a spoon to scrape the seeds out of each cucumber slice, taking care not to pierce through the bottom of the cup. The sides of the cucumber cup can be relatively thin to allow a larger amount of smoked salmon dip.
3. Place cups in the fridge until ready for use or immediately fill with salmon dip. Top with a fresh sprig of parsley. Serve cold.
