Description
This Spicy Sweet Potato Bean Dip is a healthy snack that’s perfect for dipping. You’ll want to make sure you have this in the fridge at all times!
Ingredients
- 1 cup Cooked Sweet Potato
- 1 Tablespoon Tomato Puree
- ¼ cups Roughly Chopped Red Bell Pepper
- 1 Lime, Juiced
- ½ teaspoons Salt
- ¼ teaspoons Pepper
- 1 teaspoon Garlic Powder
- ¼ teaspoons Cayenne Pepper
- 1 teaspoon Chipotle Chili Powder
- ½ teaspoons Onion Powder
- ¼ teaspoons Cumin
- ½ teaspoons Paprika
- 1 Tablespoon Red Wine Vinegar
- 2 Tablespoons Olive Oil
- 14 ounces, fluid Canned Great Northern Beans, Rinsed And Drained
Preparation
Combine all of the ingredients in a food processor and puree until well-combined. Feel free to add a bit more olive oil or a splash of water to get it to your desired dipping consistency.
Note: I just baked my potato in the oven for about 1 hour, but you can also boil it if you prefer. 1 medium sweet potato yields about 1 cup.
