Tomato Zucchini Towers

A healthy vegetable appetizer.

Ingredients

  • 2 whole Medium Sized Zucchini Sliced In 1/2 Inch Thick Rounds
  • 4 cloves Garlic, Finely Chopped
  • 1 Tablespoon Fresh Basil Leaves, Shredded
  • 2 teaspoons Black Pepper
  • 1 teaspoon Garlic Salt
  • ¼ cups Balsamic Vinegar
  • 4 whole Roma Tomatoes, Sliced In 1/4 Inch Thick Rounds
  • ¼ cups Shredded Mozzarella Cheese

Preparation

Preheat your oven to 350 F.

Add zucchini, garlic, basil leaves, black pepper, garlic salt and half of the balsamic vinegar into a skillet, stir to coat the zucchini and place on a medium heat. After 5 minutes flip the zucchini pieces and add the remaining balsamic vinegar. Cook for another 5 minutes. Remove the zucchini pieces from the skillet and place them on a foil lined rimmed baking sheet.

Make towers with one piece of zucchini, a slice of tomato and another slice of zucchini. Insert a toothpick to hold each tower together and sprinkle mozzarella cheese over the tops. Bake for 5 minutes.

Serve hot and enjoy.
