Ingredients

  • ¼ pounds Wagyu Ground Beef
  • 1 teaspoon Chili Powder
  • Kosher Salt To Taste
  • 1 whole Large Jalapeno, Sliced
  • 3 cups Tortilla Chips
  • 1 cup Black Beans
  • ¼ cups Pickled Red Onions
  • ¼ cups Queso Fresco Plus More For Garnish
  • 1 whole Roma Tomato, Chopped
  • ½ whole Large Avocado, Pitted, Peeled And Diced
  • Cilantro For Garnish
  • Optional Toppings: Salsa Verde, Guacamole Or Cilantro Lime Creme

Preparation

Preheat oven to 350 F.

In a sauce pan over medium heat, gently cook the wagyu beef while breaking it up. Only cook the meat for a minute or so, as it will finish cooking in the oven. Add the chili powder and salt and mix it into the meat. Set the meat aside in a bowl, but keep the pan and the beef drippings on the heat.

Add the jalapeno to the pan and cook it in the wagyu fat for a minute or two or until lightly browned and aromatic. Set jalapeno aside.

Add the chips into a baking dish, and sprinkle the black beans over the chips. Add the jalapeno, pickled red onions, beef and queso fresco.

Bake at 350 F for about 7 minutes or until everything is hot and the cheese is getting golden.

Remove the chips from the oven. Sprinkle the top with the freshly chopped tomatoes, a little more fresh queso fresco and chunks of avocado.

Top with cilantro and serve with salsa verde, guacamole or cilantro lime creme.
