Yogurt Feta Dip with Caramelized Onions

The most perfect creamy-yet-light dip for a poolside day. Dive in!

Ingredients

  • ½ whole Onion, Thinly Sliced
  • 1 Tablespoon Olive Oil
  • ½ teaspoons Salt, Plus More If Needed
  • 1 container (7 Oz. Size) Plain Greek Yogurt
  • 4 ounces, weight Crumbled Feta Cheese
  • 1 clove Garlic, Finely Minced Or Grated
  • ¼ cups Fresh Chopped Basil Leaves
  • 1 whole Small Tomato, Seeded And Diced

Preparation

Add onion, oil, and salt to a small skillet. Turn heat to medium-low and cook for about 1 hour, stirring every 10 minutes, until onions are very soft and golden in color but not browned at the edges at all. The onions shouldn’t sizzle, just gook very gently, so turn the heat up or down as you go.

When onions are cooked, combine with yogurt, feta, garlic, and basil leaves. Stir together and taste; add as much salt as you’d like. Let the dip chill for 15 minutes or more in the fridge.

Serve topped with the tomato with chips or crackers for dipping. Enjoy!
