Ingredients

  • 4 pounds orange pulp sweet potatoes
  • 2/3 cup packed brown sugar , light or dark
  • 6 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1 dash ground nutmeg
  • 1 dash ground ginger
  • 1 teaspoon vanilla extract
  • 4 cups mini marshmallows , more or less as needed

Instructions

    1. Collect all of the ingredients.
      Preheat the oven to 375 degrees Fahrenheit. Butter a shallow 9-by-13-by-2-inch or 3-quart pan.
    2. Sweet potatoes should be peeled and cut into 3/4-inch cubes. When finished, you should have 10-12 cups. Place the sweet potato cubes on a baking sheet that has been lined with parchment paper.
    3. Brown sugar, butter, cinnamon, salt, nutmeg, and ginger in a 1 1/4 quart saucepan over medium heat Bring the mixture to a boil; stir for 7 to 8 minutes, or until the butter is melted and the sugar is dissolved.
    4. To the sauce mixture, add the vanilla extract.
    5. Distribute the sugar-butter mixture evenly over the sweet potatoes.

    12. Cover the baking sheet tightly with aluminum foil and bake for 45 minutes.
    13. Uncover the sweet potatoes after 45 minutes and gently toss to coat with the liquid.
    14. Continue to bake for about 30 minutes, stirring occasionally, or until the potatoes are tender and the liquid is syrupy.
    15. Transfer the baking sheet to a wire rack and raise the oven temperature to 450 degrees Fahrenheit. When the oven has reached 450 degrees Fahrenheit, sprinkle the miniature marshmallows on top of the sweet potatoes.
    16. Return the skillet to the oven and bake for 3 to 5 minutes, or until the marshmallows are golden brown and partially melted.
