The Victoria sandwich is a delicious cake that is well-known in England and is also well-known in the United States. It is ideal for serving after lunch or at a party, or, as the English do, as a snack with 5 o'clock tea!

Ingredients

  • Farina 00 200 g
  • 200 g donkey
  • Sugar 200 g
  • Medium eggs 4
  • Whole milk 50 ml
  • Powdered yeast for cakes 8 g
  • Salt up to 1 pinch
  • Vanilla bean 1
  • Fresh spreadable cheese 250 g
  • Mascarpone 250 g
  • Vanilla extract to taste
  • Powdered sugar 30 g
  • Raspberries 120 g
  • Raspberry jam 300 g
  • Powdered sugar 1 tbsp

Instructions

    1. Begin by combining the softened butter, sugar, and vanilla bean seeds in a mixing bowl, then whipping with a whisk until the mixture is light and fluffy. Add the eggs, one at a time, at room temperature, beating with a whisk and allowing the first egg to absorb completely before adding the next. When you have a nice homogeneous cream, combine the flour and yeast with a ladle that has been previously mixed and sieved, as well as a pinch of salt.

Sprinkle powdered sugar on top of the Victoria sandwich and serve immediately! Refrigerate the Victoria sandwich in a container with a lid.
