The sauteed razor clams are very simple to make; simply fry garlic and chili in a pan, then add the razor clams and cook until they open, then arrange them well open in a dish seasoned with the cooking liquid. Here's how to make sauteed razor clams.

Ingredients
- Cannolicchi 600 g
- Limoni 1
- 1 clove garlic
- Fresh chilli to taste
- Parsley 1 bunch
- Extra virgin
- olive oil 1 tbsp
- Sale q.b.
- Pepe q.b.
Instructions
- In a pan, heat the finely chopped garlic clove, a crumbled chili pepper, and the chopped parsley.
- Immediately add the razor clams, which have been sitting in salted water for about 30 minutes to drain, cover, and raise the heat to open them.
- Turn off the heat, remove the razor clams, and place them in a serving dish, widening the valves as much as possible.
- Season the cooking liquid with salt and pepper, then spoon it over each razor clam. Serve immediately after sprinkling with lemon juice.
Notes
- Razor clams best express the flavor of our seas and are ideal as an entry-level starter in a fish-based menu. It is critical that the razor clams are cooked quickly, or else they will become hard and have a bad taste.
