The sauteed razor clams are very simple to make; simply fry garlic and chili in a pan, then add the razor clams and cook until they open, then arrange them well open in a dish seasoned with the cooking liquid. Here's how to make sauteed razor clams.

Ingredients

  • Cannolicchi 600 g
  • Limoni 1
  • 1 clove garlic
  • Fresh chilli to taste
  • Parsley 1 bunch
  • Extra virgin
  • olive oil 1 tbsp
  • Sale q.b.
  • Pepe q.b.

Instructions

    1. In a pan, heat the finely chopped garlic clove, a crumbled chili pepper, and the chopped parsley.
    2. Immediately add the razor clams, which have been sitting in salted water for about 30 minutes to drain, cover, and raise the heat to open them.
    3. Turn off the heat, remove the razor clams, and place them in a serving dish, widening the valves as much as possible.
    4. Season the cooking liquid with salt and pepper, then spoon it over each razor clam. Serve immediately after sprinkling with lemon juice.

Notes

  • Razor clams best express the flavor of our seas and are ideal as an entry-level starter in a fish-based menu. It is critical that the razor clams are cooked quickly, or else they will become hard and have a bad taste.
