  • 1 kilo and a half of snails
  • 100 gr. bacon
  • 1 red chorizo ​​(chorizo)
  • 100 gr. raw ham (cooked ham)
  • 1 onion
  • 3 garlic cloves
  • oil
  • Water

  • For the tomato sauce :
  • 3 tomatoes
  • 1 onion
  • 3 garlic cloves
  • 1 bay leaf
  • oil
  • salt and sugar in equal amounts


    1. All of the snails should be cooked in cold salted water. Once the water is boiling, cook for 5-10 minutes, skimming occasionally, until done. Refresh, strain, and set aside.
    2. In the meantime, prepare the tomato sauce by sautéing the chopped onion and garlic in oil. Then add the chopped tomato, bay leaf, salt, and sugar and allow the sauce to simmer.
    3. Saute the finely chopped onion and garlic in oil in a pan. Combine the bacon, ham, and finely chopped red chorizo in a mixing bowl. Add the snails and the pasatodo-strained sauce (food mill).
    4. Cook for 5 minutes over low heat to allow the flavors to blend before serving the snail casserole with chopped parsley.
