The Boston Bun is traditionally made with mashed potatoes, which were used as a cheaper substitute for flour in the early twentieth century. Don't dismiss it until you've given it a shot! This fruit bun is light and moist thanks to the addition of mashed potatoes. It's impossible not to love this classic sweet treat when it's topped with a thick and fluffy icing.

Ingredients

  • 275 grams Luke Warm Water
  • 5 teaspoons Yeast
  • 550 grams bakers flour
  • 1 teaspoon salt
  • 2 teaspoons milk powder
  • 2 teaspoons bread improver
  • 65 grams sugar
  • 45 grams soft butter
  • 1 teaspoon cinnamon
  • 100 grams sultanas
  • 100 grams currants
  • 75 grams Copha at room temperature
  • 150 grams icing sugar
  • 2 tablespoons water
  • 1 teaspoon Vanilla extract/essence

Instructions

    1. In a mixing bowl, combine all ingredients except the fruit
    2. Mix for 40 seconds at speed 3
    3. Knead for 7 minute
    4. Knead in the fruit for 1 minute
    5. Remove from bowl and set aside for 15 minutes in a warm place to prove.
    6. Knock it down and divide the dough in half. 2. Form two round balls and place them on a nonstick tray to prove for up to an hour, or until they have doubled in size.
    7. Bake for 30 minutes at 180 degrees Fahrenheit.
    8. Mix all of the ingredients in a mixing bowl for 5 minutes on high speed. 3. Boston Bun on ice
