Ingredients

  • Eggs: 10
  • Sugar 400 g
  • Farina 400 g
  • Grated lemon 1
  • Baking yeast 2 sachets
  • Red powder dye
  • Latte 500 ml
  • Sugar 100 g
  • Yolks 5
  • Corn starch 60 g
  • Vanilla bean 1
  • Liquid cream 250 ml
  • Water 200 ml
  • Sugar 100 g
  • Limoncello or fruit juice: a small glass
  • Red fruits 850 g
  • Lemon 1
  • Sugar 250 g
  • Berry jam
  • White or flesh pink sugar paste 500 g
  • Corn starch 1 tbsp

Instructions

    1. Begin by preparing the two sponge cake bases, making sure to divide the red dye powder evenly between the two bases before adding the whipped egg whites to the mixture.
    2. Allow the two bases to cool after they have been cooked. Place one on top of the other and shape the two discs into a slightly oval ball. Make a shallow cut along the surface of the brain to separate the two hemispheres, right and left.
    3. At this point, cut the two bases horizontally, resulting in four discs of sponge cake, and proceed to the filling. For this cake to be frightening even on the inside, the fillings must be both good and hideous at first glance.
    4. Then, using custard and Chantilly cream, make a simple diplomatic cream. Wash the red fruits carefully at this point. If you can't find any fresh ones, frozen ones will suffice.
    5. Pour the red fruits and sugar into a saucepan and cook for about 10 minutes, stirring occasionally. Then, remove from the heat and add the juice of half a lemon.
    6. At this point, strain the red fruits from the red liquid coulis using a strainer. Then, thoroughly combine the cooled red fruits with the diplomatic cream. As a result, the forest fruit filling is complete.
    7. At this point, prepare a simple bath before proceeding with the assembly. In a saucepan, combine the water and sugar. Heat on low until the sugar dissolves, then remove from the heat. Now, add the glass of limoncello and stir well (a non-alcoholic variant is to replace the limoncello with raspberry or blueberry fruit juice).
    8. When ready, wet all four discs with a brush or a simple spoon to make them soft when tasting.
    9. So fill the three discs with diplomatic cream and berries, then cover with the fourth disc, which will cover the brain. The zombie brain cake is finished at this point, but the final decoration is still missing.
    10. Form small snakes with your hands, about 1cm in diameter, out of the sugar paste. Cover the brain cake with berry jam and arrange the snakes to reflect the characteristics of the telencephalon's surface.
    11. Once the entire brain has been covered, the cake is complete; only the final touch is required to give the illusion of blood. To thicken the coulis left over after cooking the berries, add a tablespoon of cornstarch.
    12. Cover the entire brain with wild berries jam using a kitchen brush to fill the holes between a small cake of sugar paste and the other, and finish just before displaying the final masterpiece by pouring the coulis on the cake. with berries thickened to resemble living blood
    13. To make the cake even more suggestive and realistic, insert a large butcher knife in the center of the two hemispheres, and that's all there is to it!
