Ingredients
- 120 g of flour
- 120 g of sugar
- 120 g of Santa Lucia butter
- 2 eggs
- 5 g of baking powder
- 100 g of blueberries
- 200 g of Santa Lucia butter
- 400 g of powdered sugar
- 25-30 blueberries
Instructions
- Directly sift the flour and baking powder into the mixture and stir with a wooden spoon. Combine the washed and dried blueberries in a mixing bowl.
- Pour the mixture into the cupcake mold cups that have already been inserted. Bake for 20 minutes at 180°F in a preheated oven.
- Meanwhile, whisk the butter for the cream and gradually add the icing sugar, increasing the speed.
- Mash the blueberries, remove the seeds and peel, and sauté them for two minutes with a knob of butter and a heaping spoonful of sugar, until they come apart and form a purple puree.
- Add the puree to the cream and continue to beat until the cream is firm and compact. Allow the cupcakes to cool for a few minutes before decorating with the blueberry cream, if desired.
