Flaxseed pudding with blueberries and mango

Flaxseed pudding with blueberries and mango is a deliciously fruity, fresh, light, and simple dessert. Also great for breakfast.

Ingredients

  • 40 gof flax seeds
  • 2 dlvegetable milk, eg. cashew or almond drink
  • 250 gof beaten white
  • 100 gof fresh or frozen blueberries, thawed
  • 1mango
  • 3 sprigsof mint

Instructions

    1. Combine the flax seeds and cashew nut drink. Allow it to rest in the refrigerator for at least 3 hours.
    2. In a mixing bowl, combine the soaked flax seeds and the blanc battu. Set some blueberries aside. Set aside a third of the mango cubes. Blend in the remaining blueberries and mango until smooth. Remove the leaves from the mint sprigs and finely chop them. Half of the mint should be combined with the fruit puree. Layer the flaxseed cream and fruit puree in the glasses, alternating between them. Finish with the reserved fruit and the remaining mint. Serve right away.
