Kapsa is a traditional Middle Eastern dish that consists primarily of chicken, rice, and spices, all of which are flavored with an onion and cardamom sauce.

Ingredients

  • Basmati rice 500 g
  • Copper onion 1 pc
  • Whole halal chicken 1 pc
  • Tomatoes 2 pcs
  • Tomato puree 30 ml
  • Cardamom 6 berries
  • Cloves 6 pcs
  • Dehydrated lime 4 pcs
  • Black pepper 6 grains
  • Mixed Yemeni spices 2 tbsp
  • Saffron 20 pistils
  • Peeled almonds 10 pcs
  • Raisins 15 pcs
  • Cinnamon 1 stick
  • Evo oil to taste

Instructions

    1. Remove the skin from the chicken and cut it into eight pieces. Allow the basmati rice to drain after gently rinsing it three times. Chop the onion finely and fry it in a large pan with a generous drizzle of extra virgin olive oil. Brown the chicken by turning it frequently. Meanwhile, cut the tomatoes into small cubes and combine with the chicken. Finish with the tomato puree and mix.
    2. Combine the Yemeni spices with the cardamom, cloves, dehydrated lime, black pepper, saffron, and cinnamon. Mix in the spices, season with salt and pepper, and serve.
    3. Cook everything for 5 minutes before adding about a liter of water. Allow everything to boil for 15-20 minutes before adding the almonds and cooking for another 5 minutes. Cook for another 10 minutes after adding the rice and closing the pot with a lid. Finally, stir in the raisins and cook for another 2-3 minutes with the lid closed. Turn off and set aside after this time.
    4. Serve in a single serving dish, with the rice arranged as a bed and the chicken on top. Season with salt and pepper to taste.
