These delectable Greek cookies are frequently seen at Christmas and other traditional holidays. The toasted almonds add a unique flavor note. This recipe is a treasure that I keep in a notebook that my sister gave me, and every time I make something with it, I honor it.

  • 200 g manteca
  • 1/2 cup powdered sugar
  • 1 yema
  • 1/2 teaspoon baking powder
  • 1/2 glass cogñac o brandy
  • 300 flour 0000
  • 100 g toasted almonds
  • 1 tsp Vanilla essence
  • c/n Orange blossom water or rose water
  • c/n Powdered sugar


    1. Beat the butter (pomade) with the sugar until you get a white cream. This is the secret of these cookies, the butter shake.
    2. To make a white cream, combine the butter (pomade) and sugar. The butter shake is the key to these cookies' success.
    3. Combine the yolk, cognac, and essence, then combine with the flour and toasted and chopped almonds; it will appear to need flour, but do not add it without kneading until it sticks to your hands.
    4. Form balls with your finger in the center, or shape into moons. Bake at 170°F for 30 minutes, or until they begin to change color and are ready.
