    1. Using the mixer, finely chop the rolled oats.
    2. Crumble the yeast in a small amount of slightly warmed water, then add the honey and stir with a teaspoon to dissolve.
    3. Mix the prepared flours and oat flakes in a mixing bowl. Arrange them in a fountain, then pour the remaining water, followed by the water containing the dissolved yeast and honey. Knead for 1-2 minutes to thoroughly combine the ingredients.
    4. Transfer the mixture to a pastry board and knead it for about 10 minutes by hand. Add the oil and salt and knead for another 5 minutes, or until the mixture is homogeneous and soft.
    5. Form a ball, cover it with a damp cloth, and set it aside in a warm, draft-free location for 2 hours, or until it has doubled in volume.
    6. After the time has elapsed, place the dough on a work surface and fold it several times on itself before dividing it into equal-sized pieces of 50-60 g each.
    7. Squeeze each piece gently between your fingertips to form a thick disk, then roll it into a cylinder. Roll it up and shape it into a sandwich with your hands. Continue with the remaining pasta pieces in the same manner.
    8. Place the sandwiches on a plate lined with special paper, slightly spaced apart, cover with a damp cloth, and set aside for about an hour to rise at a constant temperature.
    9. Brush the sandwiches with milk, then top with oat flakes and bake for 20-25 minutes in a preheated oven at 180 ° C (static mode), with a bowl of water on the bottom.
    10. Allow your sandwiches to cool on a wire rack before serving.
