- 1 kg of apricots
- 500 gr sugar
- juice of half a lemon
- Remove the pit from the apricots and peel them. Place them in a saucepan with the sugar and lemon juice and leave them to marinate for 1 hour.
- Cook for 35-40 minutes, stirring occasionally and removing the foam, in a medium saucepan over medium heat. When the jam is finished, if a finer texture is desired, mash it with a blender or food processor.
- Fill the previously sterilized glass jars with the jam and tightly seal them. Place the jam jars in a saucepan of boiling water for 30 minutes to create a vacuum. Another option is to flip them over and leave them that way for 24 hours. The jam will keep perfectly for a few months this way.
