Black Forest cake recipe

The 'Black Forest' cake is a traditional dessert from the Baden region of Germany, and its main ingredients are chocolate and cherries. In this recipe, we'll take a variation on a classic elaboration and make it slightly different but just as delicious and more modern.

Ingredients

  • 200 g of dark chocolate
  • 200 g of White Chocolate
  • 250 ml of Cream to assemble
  • 100 g of white sugar
  • 3 gelatin sheets
  • 200 g of Cherries
  • 20 ml Cherry liqueur
  • For the vanilla cream
  • 250 ml of Cream to assemble
  • Natural vanilla with its seeds
  • 50 g of white sugar
  • 20 ml Cherry liqueur

Instructions

    1. We whip the cream with the vanilla seeds, sugar, and cherry liqueur and set it aside to cool.
    2. We soaked the gelatin in cold water.
    3. We bring 150 mL of water and sugar to a boil.
    4. Dilute with the drained gelatin
    5. Melt the dark chocolate in a bain-marie, then stir it into the previous mixture and set aside to cool
    6. We whip the cream and fold it into the chilled mixture.
    7. Pit and chop the cherries, reserving four for the end.
    8. In a bowl, we place four pastry rings and cover the bottom with chopped cherries.
    9. Refrigerate for 4 hours after filling with the prepared chocolate mixture.
    10. Melt the white chocolate in a water bath and spread it on parchment paper with a spatula until it is 2 mm thick.
    11. When it's hard, we use a pasta cutter to cut 5 cm circles. Allow to cool before reserving these circles for the final decoration.
