Chinese omelette

Ingredients
- 6 eggs
- 4 mushrooms diced
- 4 eschalots diced
- 1 cup bean sprouts, chopped
- 1/2 cup of ham (deli) cut into cubes
- 1 teaspoon soy sauce
- 1/2 teaspoon ground ginger
- 1 cup of optional green prawns
- 1 cup diced cooked chicken optional
- 1 teaspoon of cornmeal
- 2 chicken bouillon cubes
- 1/2 teaspoon ground ginger
- 1 cup of water
- 2 teaspoons soy sauce
Instructions
- Omelette: In a large skillet, brown all of the omelette ingredients except the eggs and soy sauce.
- Remove from the pan and divide evenly into three portions.
- Beat the eggs, then add the soy sauce and continue to beat.
- Separate the egg mixture into three equal parts.
- Reheat a portion of the fried ingredients in the skillet.
- Pour in more than one egg mixture serving.
- When the egg mixture appears cloudy, roll the omelette up and place it on a plate.
- Repeat with the other two servings.
- Sauce: Combine all of the ingredients in a mixing bowl and heat until thickened. Pour some on top of each tortilla.
