  • 6 eggs
  • 4 mushrooms diced
  • 4 eschalots diced
  • 1 cup bean sprouts, chopped
  • 1/2 cup of ham (deli) cut into cubes
  • 1 teaspoon soy sauce
  • 1/2 teaspoon ground ginger
  • 1 cup of optional green prawns
  • 1 cup diced cooked chicken optional
  • 1 teaspoon of cornmeal
  • 2 chicken bouillon cubes
  • 1/2 teaspoon ground ginger
  • 1 cup of water
  • 2 teaspoons soy sauce


    1. Omelette: In a large skillet, brown all of the omelette ingredients except the eggs and soy sauce.
    2. Remove from the pan and divide evenly into three portions.
    3. Beat the eggs, then add the soy sauce and continue to beat.
    4. Separate the egg mixture into three equal parts.
    5. Reheat a portion of the fried ingredients in the skillet.
    6. Pour in more than one egg mixture serving.
    7. When the egg mixture appears cloudy, roll the omelette up and place it on a plate.
    8. Repeat with the other two servings.
    9. Sauce: Combine all of the ingredients in a mixing bowl and heat until thickened. Pour some on top of each tortilla.
