Easy to prepare chocolate chip muffins for chocolate lovers. Make your day with these delightful muffins and enjoy them with your tea or coffee.
Ingredients
- 2 cups Flour
- 1 Tablespoon Baking Powder
- 6 whole Medium Eggs
- 3 Tablespoons Honey Or Sweetener Of Choice
- 1 Tablespoon Vanilla Extract
- 1 Tablespoon Unsweetened Cocoa Powder (optional)
- 3-⅝ ounces, weight Chocolate Chips (Sugar Free)
Preparation
Preheat oven to 180°C (365°F). Prepare muffin tray with muffin baking cups. Set aside.
Measure flour in a measuring cup or on a scale. Mix baking powder into the flour.
In a mixing bowl, break eggs. Add honey. Beat until light yellow, about 5–10 minutes. Be patient! Add vanilla extract. If you want your muffins super chocolatey, mix cocoa powder in with the eggs.
Carefully fold in flour mixture. If the batter is too hard to stir, add a little bit of water, alternating between adding flour and water. Finally, fold in chocolate chips.
Spoon pastry into muffin holders, about 2 or 3 spoonfuls each. Pop muffin tray into preheated oven for 15–20 minutes.
