Ingredients

  • 4 eggs (large)
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 4 ounces bittersweet chocolate
  • 1/2 cup of oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon kosher salt
  • powdered sugar, for rolling

Instructions

    1. In a large mixing bowl, combine the eggs and sugar.
    2. Mix in the cocoa, melted chocolate, oil, and vanilla extract until smooth.
    3. Combine the flour, baking powder, and salt in a mixing bowl until a sticky dough forms.
    4. Allow the dough to chill in the refrigerator for about 10 minutes.
    5. Preheat the oven to 350°F and line two baking sheets with parchment paper.
    6. Spread out dough balls with a 1.5 tablespoon scoop and roll in additional granulated sugar.
    7. Roll the balls in powdered sugar to coat, then place on prepared baking sheets and bake for 9 to 12 minutes, or until the edges are golden but the centers are still soft.
