Dosa Podi with Garlic


This is a twist on the traditional Milagai podi. My mother used to make this version of milagai podi for my brother and me because we have always liked garlic.

Ingredients
- 1 tablespoon of cooking oil
- ¼ cup gram Bengal divided (chana dal)
- 8 dried red chili peppers
- 5 cloves of garlic
- ½ cup fresh curry leaves
- ¼ cup coriander seeds
- 2 tablespoons cumin seeds
- salt to taste
Instructions
- Heat the oil in a shallow skillet over medium heat; fry the chana dal for about 5 minutes in the hot oil. Toss in the red bell peppers, garlic, curry leaves, coriander seeds, and cumin seeds and cook for 3 minutes, or until the spices are toasted and fragrant.
- Spread the mixture on a piece of newspaper to cool to room temperature before grinding to a powder. Season with salt and pepper. The powder will keep for a few months in an airtight container on the shelf.
