  • Farina 350 g
  • Butter 180 g
  • Sugar 130 g
  • Yolk 2
  • Sale 1 pinch
  • Peaches 4
  • Peach jam 250 g
  • Lemon 1

    1. Combine 300 g of flour, sugar, salt, and 150 g of cold butter to make a sandy mixture. Continue to work with the egg yolks until you have a smooth and homogeneous dough. Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes. Meanwhile, wash the peaches, remove the stone, and thinly slice them. When they're done, place them in a bowl with a little water that has been diluted with lemon juice.
    2. Preheat the oven to 350°F. Grease and flour the molds and set aside.
    3. Roll out the pastry on a floured surface to a thickness of 5 mm and cut out discs three cm wider than the molds. Fill each mold with two tablespoons of jam and arrange the peach slices in a circle, leaving a hollow in the center to be filled with more jam. Bake for 20 minutes at 180 degrees Celsius, or until the pastry is slightly brown. Remove from the oven and set aside to cool before serving.
