These Papaya Bars are a silky smooth custard made with fresh papaya fruit and served on a bed of short bread crust. Ideal for picnics or summer fun.

Ingredients
- 1/2 cup of flour
- 1/2 coconut cup
- 1/4 coconut sweet cup
- 1 tablespoon coconut oil
- 1 teaspoon salt
- 1/4 honey cup
- 1/2 cup of flour
- 1/2 papaya cup
- 1 egg
- 1/4 cup of lemon juice
Instructions
- In a pot, combine the coconut oil, flour, coconut, and sweetener and stir constantly until it browns slightly.
Add the mixture to a greased mold and bake for 10 minutes at 400F. - The papaya that remains as honey and without lumps is then processed.
- In a mixing bowl, combine the processed papaya, honey, and egg.
- Add the flour in a thin layer, alternating with the lemon juice.
- Bake for 20 minutes at 350°F with the second mixture added to the base.
