Royal Icing Recipe


Royal icing is a fluid compound made from egg whites and powdered sugar (to which food coloring can be added) that is used to decorate desserts in the confectionery industry.

Ingredients
- Powdered sugar 150 g
- Albums 30 g
- Food coloring to taste
- Lemons a few drops
Instructions
- To make the royal icing, place an egg white in a bowl with a few drops of lemon juice to help the egg whites mount better.
- When the egg white is well whipped, slowly drizzle in the icing sugar, a little at a time. Continue to whisk the icing until the icing sugar is completely blended and you have a homogeneous icing free of lumps
- Put the royal icing in a pastry bag and cut the tip to make a very fine and narrow hole for decorating the cookies in a nice and fun way.
- If necessary, add a few drops of food coloring (in powder or gel) a little at a time while continuing to beat until the desired color is achieved. Then, make the decorations for your cookies, cupcakes, and cakes! This amount of royal icing will be enough to decorate approximately 60 cookies!
Notes
To prevent lumps from forming, place the real ice in a small bag.
