Split pea soup recipe

The split pea soup is a tasty and filling soup made from a few simple ingredients that is best served steaming on a cold winter evening.

  • Split peas, 250 gr
  • Cube smoked bacon, 70 gr
  • Onions 1 small
  • Carrots 1 small
  • Celery 1 rib
  • 1 clove garlic
  • Extra virgin olive oil, 3 tbsp
  • Vegetable broth , 1 lt


    1. To begin making the split pea soup, soak the split peas in plenty of cold water for at least 3 hours. In a large pan, finely chop the carrot, celery, and onion and fry them with the garlic in extra virgin olive oil. Brown them for about 10 minutes, then add the diced bacon (or pancetta in a single slice if you prefer) and brown it well. Rinse the peas thoroughly in cold running water
    2. and add them to the pan, stirring to flavor, before covering the peas with the hot vegetable broth. Cover the soup and cook over low heat (it will need to simmer slightly) for about 60 minutes, or until the peas are very tender and begin to unravel.
    3. To make a more substantial dish, add pasta (ditaloni, broken spaghetti, etc.) or rice to the soup!
