Vegan Tzatziki Sauce


Vegan tzatziki is a light, simple, and flavorful sauce with Greek flavors. To be used as a salad dressing, as a side dish with sautéed seitan, or to stuff croutons.

Ingredients
- 250 g of natural soy yogurt
- 1 cucumber
- 1 clove of garlic
- extra virgin olive oil
- apple cider vinegar

Instructions
- Clean and peel the cucumber before grating it finely with a fine-mesh grater. Place the pulp in a colander and press it with a spoon to remove all liquids. Pour the yogurt into a mixing bowl, then add the oil, vinegar, and the garlic clove, cut in half.
- All that remains is to add the peeled cucumber and mix your sauce.
- Refrigerate the bowl with the vegan tzatziki for 30 minutes to allow the flavors to blend. However, remember to remove the two garlic cloves before serving.
