COCKTAIL SAUCE OR PINK SAUCE WITHOUT CREAM AND KETCHUP RECIPE

The cocktail sauce or pink sauce is excellent as an aperitif with a fresh vegetable pinzimonio, but it is also required for the preparation of classic dishes, the most famous of which is undoubtedly the prawn cocktail. We revisited it in relation to the traditional American pink sauce by removing cream and ketchup, making it more similar to our tastes and creating a fusion cuisine recipe.

Ingredients

  • Egg 1
  • Mayonnaise 120 Ml Approx
  • Vinegar Apple Or White Wine 2 Spoons
  • Sale To pleasure
  • Tomato Extract 2 Spoons
  • Cognac 1 Spoon
  • Sugar One Teaspoon

Instructions

    1. Make the mayonnaise without the lemon, as directed in the basic recipe, then add the vinegar and sugar.
    2. If necessary, thicken with another drop of oil, then add the tomato extract and mix well, or better yet, blend. Finally, add the drops of cognac to complete the sauce.
    3. If the cocktail sauce is too thin and bitter, blend it again and place it in the refrigerator for a few minutes before serving.
    4. The cocktail sauce will keep in the refrigerator for a few days.
