Bitter lemon soda


This is very similar to Krest® Bitter Lemon (found in Africa) or Schweppes® Bitter Lemon (found in the United States) (found in Europe). Unfortunately, nothing comparable can be found in the United States, but this comes close! This is the ideal thirst quencher for a hot summer day!

Ingredients
- 1 ½ cups white sugar
- 1 ½ cups of water
- 1 lemon, grated
- 2 sprigs of fresh lavender
Instructions
- In a saucepan, combine the sugar, water, lemon zest, and lavender; bring to a boil. Cook for 5 to 10 minutes, or until the sugar dissolves. Remove the pot from the heat and set aside for 15 minutes to allow the syrup to cool to room temperature.
- Pour the lemon juice into a pitcher, then strain in the syrup and stir until the concentrate is evenly mixed. Refrigerate the concentrate for at least one hour.
- Fill serving glasses halfway with ice and pour about 2 ounces of concentrate into each; top with tonic water and stir.
