The filling for these chicken rolls is goat cheese, spinach, pine nuts, and garlic, and they are made with boneless thighs. It's topped with a wine, honey, and lemon sauce and baked.

Ingredients

  • 4 boneless chicken thighs
  • 100 grams of goat cheese
  • 100 grams of spinach
  • 10 grams of pine nuts
  • 10 grams of walnuts
  • 1 deciliter of white wine
  • 1 lemon
  • 2 tablespoons of honey
  • 2 sprigs of rosemary
  • 1 clove garlic

Instructions

  1. Make the ingredients. Season the chicken to taste. The goat cheese should be crumbled. The spinach leaves should be washed. Slice the lemon into thin slices. Garlic, peeled and minced Prepare the walnuts by chopping them. In a pan with 2 tablespoons olive oil, sauté the walnuts and pine nuts for 1 minute.
  2. Fill the thighs with stuffing. Sauté the spinach and garlic for 2 minutes in the pan. Remove from the oven and combine with the cheese. Season with salt and pepper. Distribute the stir-fry over the thighs. Tie the ends together with bridle thread. Brown in 2 tablespoons of oil and place on a cookie sheet.
  3. Bake and serve with sauce. Combine the wine, honey, lemon, and rosemary in a mixing bowl. In a preheated 180° oven, bake for 30 minutes. Remove the thighs from the sauce and set aside. Put this in a saucepan and cook for 5 minutes, or until it has reduced by half. Each thigh should be cut in half and sauteed.
  4. Flavors to suit every palate. If you cook it with turkey, it will be even more delicious. You can also experiment with the intensity of the flavor and the nuts: for example, surprise with cured cheeses and a pistachio filling.
