MALAYSIAN CURRY POWDER

Ingredients
- 4 dried red chilies
- 4 cardamom pods
- 1 cinnamon in branch
- 4 tbsp coriander seeds
- 2 tbsp cumin seeds
- 2 tsp fennel seeds
- 1/2 tsp whole teeth (12-15 )
- 1/2 tsp black peppercorns (20)
Instructions
- In a hot, dry pan over medium heat, toast all of the spices for 2-3 minutes, or until aromatic.
- In a mill or mortar, grind until you get a powder. Keep the container sealed. This amounts to roughly a third of a cup.
