MALAYSIAN CURRY POWDER RECIPE

Ingredients

  • 4 dried red chilies
  • 4 cardamom pods
  • 1 cinnamon in branch
  • 4 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • 2 tsp fennel seeds
  • 1/2 tsp whole teeth (12-15 )
  • 1/2 tsp black peppercorns (20)

Instructions

    1. In a hot, dry pan over medium heat, toast all of the spices for 2-3 minutes, or until aromatic.
    2. In a mill or mortar, grind until you get a powder. Keep the container sealed. This amounts to roughly a third of a cup.
