Salad with baby squid recipe

The squid salad is made with shellfish that has been stripped of its skin and boiled in a pan with pepper and a few bay leaves. Finally, we'll combine the salads with the pepper strips and the squid to serve.

  • Calamaretti 300 g
  • Mixed salad (mixed salad) 300 g
  • Red peppers 1
  • Extra virgin
  • olive oil 1 tbsp
  • Vinegar 1 tbsp
  • White onion 1
  • Celery 1
  • piece Laurel (laurel) 1 leaf
  • Black peppercorns 2
  • Sale q.b.
  • Pepper a few grains


    1. Remove both the inner and outer skin of the baby squid and wash it. Clean the celery and onion, then wash and slice them; heat a saucepan with a liter of water, the bay leaf, and the two peppercorns.
    2. Boil for about 7 minutes, then add the squid and cook for 5 minutes more. Remove from the heat and cool in the cooking broth before draining and cutting into rings.
    3. Clean the salads by washing and gently drying them with a cloth; clean the pepper by removing the seeds and internal filaments, washing it, and cutting it into thin strips.
    4. In a large mixing bowl, combine the salads and the strips of pepper and squid; season with oil, vinegar, a pinch of salt and pepper, and serve.
