  • 3 tablespoons (soup) of butter
  • 500g clean small shrimp
  • 1 onion, chopped
  • 2 cups (tea) of arboreal rice
  • 1/2 cup (tea) dry white wine
  • 3 cubes of fish broth
  • 6 cups (tea) hot water
  • 1/2 cup (tea) chopped green-smelling
  • 1 cup (tea) grated Parmesan cheese
  • 3 tablespoons (soup) of creamy curd
  • Salt and black pepper to taste
  • Chopped parsley for sprinkling


    1. Half the butter is melted in a saucepan over medium heat, and the shrimp and onion are fried for 3 minutes. Remove the skimmings with a skimming and set them away. Return the pan to high heat, add the remaining butter, and cook the rice, stirring occasionally, for 3 minutes. Pour in the wine and simmer until it has completely evaporated.
    2. From shell to shell, add the dissolved fish broth in the water, stirring continually until the rice is al dente. Combine the reserved shrimp, green smell, parmesan, and curd in a mixing bowl. Sprinkle with parsley and season with salt and pepper.
