The veal cutlets are a traditional Milanese dish that can be prepared in a variety of ways. One of the most well-known variations calls for the use of Marsala wine, as detailed in this simple step-by-step recipe. A very simple and quick second course (it's ready in 15 minutes) made with ingredients that everyone has in their fridge or pantry and that goes with any side dish.

Ingredients

  • 600 grams veal rump
  • 50 grams butter
  • 1 dl marsala
  • q.b. farina
  • q.b. olive oil
  • q.b. sale
  • q.b. pepe

Instructions

    1. Make the meat. Any fatty parts of the veal rump slices should be removed. Cut them into small escalopes of 6-7 centimeters in diameter, and cut the edges with 2-3 cuts to prevent them from curling during cooking. Arrange them, one at a time, between two sheets of parchment paper and thin them slightly with the meat tenderizer.
    2. Scallops should be floured. Pour a generous handful of flour onto a plate, then pass the scallops through it on both sides, shaking to remove the excess. Moving the meat with kitchen tongs is a very practical way to accomplish this. Spread them out evenly on a sheet of parchment paper, not overlapping them.
    3. Prepare them. In a large saucepan, melt 40 grams of butter and a drizzle of oil until bubbly. Add the meat slices, brown them for 1-2 minutes per side, season with salt and pepper, and remove from the pan, keeping them warm between two plates. Allow the Marsala to evaporate before adding 4-5 tablespoons of lightly salted water or boiling broth. Allow it to thicken slightly before returning the scallops to the pan. To wrap them in the dressing, heat them on both sides.
    4. Arrange the Marsala escalopes on individual plates or in a single hot serving dish. Melt the remaining butter in the cooking juices, stir, and pour over the meat. As desired, serve with mashed potatoes, buttery seasonal vegetables, or salad.
