Ingredients
- 500 g of flour
- 150 ml of warm water
- 125 ml milk
- 25g sugar
- 20g butter
- 10 g of salt
- 2 teaspoons dry yeast
- 1 egg
- 1 yema
- Sesame seeds
Instructions
- Sift the flour, salt, sugar, yeast, lightly beaten egg, and incorporate in a large mixing bowl. Pour in the water and milk and mix with a wooden spoon until a slightly sticky dough forms.
- Transfer to a clean and floured surface, mix until smooth, add the room temperature butter in cubes, and knead with your hands for about 10 minutes until you have a smooth and elastic dough that is adherent but not sticky, form a ball, and rest covered in a bowl for 90 to 120 minutes, until doubled in size.
- Divide the dough into 8 pieces of approximately 120 grams each, rest for 5 minutes, and roll the buns to give them a round and smooth appearance, distribute them on a baking tray at least 5 centimeters apart, squash them a little with the palm of your hand, cover with a clean kitchen towel, and proof for 60 minutes, or until doubled in size.
- Brush the loaves with the beaten egg yolk mixed with a little water and sprinkle with sesame seeds to taste. Place the tray in a preheated oven at 200 ° C (392 ° F) and bake for about 15 minutes (ideally the first 5 minutes in steam) until golden brown. Remove from the oven and cool on a wire rack in a warm place to avoid cracking.
